- She resided in Thailand, South Korea, and Hong Kong while transitioning from a teaching career to writing and bartending.

The day after I turned 24, I set off for Thailand with the intention of teaching English. Instantly, it became apparent that life in London wasn’t serving me well; my aspirations lay far beyond the borders of my homeland.
Next on my journey was Seoul for two years before spending ten delightful years in Hong Kong — where I truly discovered my sense of belonging. In Hong Kong, I realigned my career trajectory away from teaching—which had merely been a means to travel—to something more aligned with my passions.
I secured an incredible position as the food and drink editor for Time Out Hong Kong. It was during this time that I fell head over heels for Asia’s vibrant cocktail culture. The bartenders there felt like family—finally placing me among people who understood me.
Shifting My Focus: Books & Bartending
I began working in hospitality at age 14 and knew it was time to return to bartending full-time after various side gigs over the years.
I later took on the role of managing editor at DRiNK Magazine Asia while crafting cocktails at The Old Man bar in Hong Kong. Our team ventured around for pop-up events which deepened my connection within Asia’s cocktail scene. Not long afterward, The Old Man earned recognition as one of Asia’s 50 Best Bars 2019, opening up an exhilarating view into this enthralling industry.
Eventually shifting gears again led me to write “Cocktails of Asia,” a tribute to this extraordinary environment that welcomed me so warmly. This book captured the attention of what would become my co-founder; ultimately guiding us both towards Japan’s capital city where we launched Tokyo Confidential. My partner remains private about their identity but plays an integral role behind our venture.
Tactical Relocation: Moving Reluctantly…
The decision weighed heavily on us both—it was not an easy choice! After cultivating a fulfilling life and close friendships in Hong Kong’s tight circle, I realized adjusting elsewhere—particularly bustling Tokyo—wouldn’t be simple or straightforward either!
A self-examination revealed limitations within my editorial position coupled with growing dissatisfaction experienced by my husband—a key player alongside me at Tokyo Confidential.
My parents often applauded what they deemed brave voyages abroad; however such labeled bravery puzzled me due their limited travel experiences themselves! Yet looking back now—maybe they were correct… Youthful audacity fades as stakes rise (and fear too). At mid-30s change evokes anxiety but recognizes opportunities awaiting exploration instead—with deliberate commitment!
New Country Navigation: A Different Game Now
Bearing witness firsthand dragon boats racing past tourist flags drew nostalgia from frequent trips spent across Japanese landscapes rather readily—the sort enjoyed prior excitement! However adapting has felt astoundingly different upon immersing completely into daily life—in city rhythms dictating cooperation essentials whilst owning responsibilities one simply couldn’t foresee when visiting solely as tourists!
Certainly readjustment feels starker compared between residing here vs prior visits where comfort reigned supreme even amid minor encounters outside preferred zones enjoyed previously![like roaming streets chaotically strolling without precise destination], learning fast through utter spontaneity…Now expectations manage complexity differing profoundly knowing staff envision mentorship requires commitment beyond mere attendance!
